The kitchen is one of the places which most demand fire protection in restaurants, commercial centers, hospitals, schools or hotels.
Apart from a large circulation of people in an accelerated working pace, there are several risk factors such as equipment working with high temperatures, flames, use of vegetable and animal fats, among other combustible materials.
The fire may start in a small appliance or in the duct of one of the hoods and spread very rapidly through the whole ambience without being noticed, causing serious disturbances.
The extinction system for kitchens assure the protection all over the kitchen including the exhaustion pipes, exhaustion filters and the kitchen utensils (as per NFPA 17A).
When activated, the discharge takes place through diffusers located in the risk areas, covering the hot or inflammable surfaces, forming a soap gel which cools fats, separates the combustible from the oxidant and prevents the escape of inflammable steams.
The system may be solely configured for the hood protection with saponifying extinguishing agent or, together with the CO2 suppression system for the firefight in the hoods’ exhaustion ducts.
